Chia seed pudding and fruit

There's nothing that gets me ready for a day like a big bowl of fruit. The more colourful the better. My particular favourite go-to breakfast is a bowl of chia pudding topped with colourful fruit like shown here.



I usually start with a couple of tablespoons of chia seeds and soak them in a little water to just cover them for about 10 minutes. Once they've soaked for a bit I will mix in about 100ml skimmed milk, a teaspoon of honey for sweetness and I quite like mixing in a couple of tablespoons of dessicated coconut for taste. I will mix this up thoroughly and leave it in the fridge overnight leaving the chia seeds to fully expand by the morning.
By which time I will chop up as many fruits as I can. For today's version I used strawberries, blueberries and a banana.
And then go ahead and top your chia pudding, which should have a consistency similar to rice pudding, and enjoy!

  1. I've been looking for a chia seed breakfast recipe, I heard that almond milk is nice too. Will try your version with coconut, great idea x
