Last week has been a bit of a whirlwind for me, and I can't say I remember much of it, not helpful when writing my week review, hmmm.
I have been ill for the latter part of last week and spent most of it in bed. I was feeling faint for most of the weekend, and now have a full blown flu - lovely. Not impressed, and not been able to make the most of the snowy weather, but to be honest I would rather be warm indoors. I did venture out for a short while on Sunday morning as I really wanted comfort food, and had to go to the shops. The worst thing about not being at your mum's when you are ill is that you have to look after yourself. Asif was lovely looking after me, but on Sunday I made myself some yukhani - Asian chicken soup/broth. It's the first time I have made it on my own, and I have to say it was amazing! I did feel better after having it, and what a great dish to have on a winter's day?
A baby chicken cut in pieces,
Enough water to completely cover the chicken,
A green chilli
A tablespoon spoon of garlic and ginger paste.
some yakhani pilau mix (I don't know what exact ingredients are in this, but got a Shaan packet from an Asian foodstore)
and half a teaspoon of chilli powder.
Put all the ingredients in a saucepan, cook on full heat until the chicken is tender and falls off the bone. You can add more water during cooking if you want more broth. It takes about half an hour to 45 minutes.
